A specialized flour blend fermented for up to 30 hours. The result is a structure that is incredibly soft, airy, and light on the stomach.
The Golden Scissors
Cutting with a wheel crushes the alveoli. We use golden scissors to gently slice the pizza, preserving the cloud-like texture.
